IPFW Students Provide Authentic Italian Cuisine to Fort Wayne with New Student-Run Restaurant

FORT WAYNE, Ind.—Seniors in the Department of Hospitality and Tourism Management at Indiana University–Purdue University Fort Wayne (IPFW) will soon be serving up authentic Italian Cuisine at Ristorante Pranzo, this semester's student-run restaurant. 

Pranzo will operate in the Holiday Inn at IPFW and the Coliseum, 4111 Paul Shafer Drive off of Coliseum Boulevard, and will be open every Thursday from 11:30 a.m. to 1:30 p.m., February 18 through April 28. Different from previous semesters, Pranzo will be open for lunch only, as opposed to dinner.

Operating the restaurant is a capstone graduation requirement for Hospitality and Tourism Management (HTM) students in the Advanced Food Service Management course. The course gives students valuable experience with every aspect of restaurant operation.

"I think the most important thing is giving management students the opportunity to manage as well as generating profits that will go towards travel scholarships, which offer students an incredible opportunity to see and experience something else that they are unable to in Fort Wayne," said John Niser, chair of HTM and under whose supervision Ristorante Pranzo operates.

"I cannot begin to express my excitement for Ristorante Pranzo," said senior Kristin Costello, marketing manager for the semester-long project. "I have always had a strong love of the food and beverage side of this industry, and Italian cuisine will forever be one of my favorite foods to both make and eat."

Costello goes on, elaborating on her own motivations for helping start Pranzo. "My goal has always been to own my own restaurant eventually," she said, "and to be able to be a part of the experience of building a restaurant from the ground up in just five short weeks is so unreal.
